In Genesis 1 we are presented with the beginning of a divine drama that can only be examined and understood from the standpoint of faith. How long did it take? How did it happen, exactly? No one can answer these questions definitively.
Why can't we take the story just as it is written?

On the seventh day God finished his work that he had done, and he rested on the seventh day from all his work that he had done. (Genesis 2:22)

For in six days the LORD made heaven and earth, the sea, and all that in them is, and rested the seventh day: wherefore the LORD blessed the sabbath day, and hallowed it. (Exodus 20:11)

It is a sign between me and the children of Israel for ever: for in six days the LORD made heaven and earth, and on the seventh day he rested, and was refreshed. (Exodus 31:17 )

Man judges a person by his past deeds, and administers penalties for his wrongdoing. God judges a person by his present character, and disciplines him that he may become righteous.
