G-d is the way many devout Jews represent the word "God." Avoidance of writing the actual word is considered, I believe, to be an act of reverence. I have not noticed it being used here, except by kaufmannphillips (a.k.a. Emmet). He is a covert to Judaism from Christianity, not a Catholic.
