Just to throw out there another idea.
"till they see the Son of Man coming in His kingdom"
Maybe this example of "see" is like a realization of coming to the truth of the risen saviour. They were blind before (like a veil over their eyes), but after the resurrection, some of the people who Jesus were talking to would believe in Him, and yet some wouldn't. For I remember reading in John 6:53 about eating the living bread and drinking His blood and then after this in verse 66 many of His disciples quit following Him. And those are the ones who would not "see".
I just thinking "see" might be understood in a different way then something we would use our eyes for.

In which case all Matt 16:28 is saying is that some of the disciples he was talking to would come to "see" the truth of the resurrected Christ, Jesus, before they died.
Another possible idea is that when I read about Stephen in Acts getting stoned to death, he "looked" towards heaven and saw the Son of Man standing at the right hand of God He "saw" the glory of God and Jesus. Here is an example at least of a disciple "seeing" Jesus in His Kingdom prior to his death. Just another example of possibly understanding Matt 16:27-28
